Meatballs:
2 lb ground beef
2 eggs
2/3 cup oatmeal
1 onion, grated
dash of salt and pepper
1/2 tsp. garlic powder
While meatballs are browning, prepare sauce:
2 Tbsp olive oil
1 onion, chopped
2 bell peppers, sliced up
1 c. pineapple juice
1 c. ketchup
1/2 c. water
4 tsp. brown sugar
4 tsp. vinigar
dash of salt and pepper
Pour sauce over meatballs and bake covered for about 30 -45 minutes.
Taste great on top of rice!
